Mark Isaak is a contributor to talkorigins.org and compiled the extremely useful Index to Creationist Claims.
Most of this web site is available in book form as The Counter-Creationism Handbook, from Greenwood Publishing Group. The book also contains an introduction on countering creationism, illustrations, and an index.
In other words: A good portion of the book can be found online here.

That would have been handy back when I was teaching science, just for my own sake. I wouldn't have been allowed to use any of it in class. All I could do is what I did. Tell the kid to talk about religion with his parents and preacher, but science in my class.
